Lemon Poppy-seed Scones recipe

These scones combine the classic flavours of lemon and poppy seeds, and they have a delicious texture.

Ingredients:

250g plain flour
100g caster sugar
1 tbsp. baking powder
½ tsp. salt
Zest and juice of one lemon
1 tbsp. poppy seeds
165g butter
175ml milk

Method of Preparation:

  1. Preheat the oven to 200C and grease and line a baking tray.

  2. Sift the flour into a bowl with the baking powder and salt. Stir in the sugar, lemon zest, and poppy seeds.

  3. Rub the butter into the dry mixture until it resembles breadcrumbs.

  4. Mix the lemon juice with the milk and pour the liquid into the dry mixture until you have a dough that comes together – you may not need all of the liquid.

  5. Once the dough comes together, spoon 2 tbsp. at a time of the mixture onto the baking tray.

  6. Bake the scones for 15 minutes or until golden brown.

This recipe makes around 12 scones, which serves around 6 people. You could omit the poppy seeds and add 1 tbsp. honey for a different flavour.
