Easy Scones recipe

These scones are very easy to make – don’t be put off by the mayonnaise. It gives them a light, slightly cakey texture.

Ingredients:

  • 250g self-raising flour
  • 175ml milk
  • 75g mayonnaise
  • 2 tbsp. caster sugar

Method of Preparation:

  1. Preheat the oven to 180C and grease and line a baking tray.

  2. Sift the flour into a bowl and then stir in the sugar.

  3. Add the mayonnaise and milk and mix well until you have a smooth dough.

  4. Either roll the dough out and cut it into scones or drop tablespoons of it onto a baking tray.

  5. Bake the scones for 25 to 30 minutes. They will double in size and they’ll be golden brown.

This recipe makes 10 scones, which is around five servings. Low fat mayonnaise, whole-wheat flour and half and half sugar all work well in this recipe too, if you want to make it more low fat.
