Drop Scones recipe

This recipe doesn’t create scones as you know them - these lovely little pancakes are also called Scotch pancakes.

Ingredients:

  • 125g self-raising flour
  • 150ml milk
  • 1 egg
  • 2 tsp. caster sugar
  • 1 tbsp. melted butter
  • 4 tsp. vegetable oil

Method of Preparation:

  1. Put the flour into a bowl and stir in the sugar. Create a well in the centre of the flour.

  2. Pour in the egg, melted butter and a little bit of milk.

  3. Stir the flour into the well in the centre and then add in the rest of the milk a little bit at a time. Keep stirring until you have a smooth batter.

  4. Heat the oil in a frying pan.

  5. Using a desert spoon, drop batter into the pan to create pancakes.

  6. Fry them for 1-2 minutes on each side. They should be golden brown.

You should make about 12-14 drop scones from this batter, which is 6 servings. Serve them with some honey and fresh blueberries.
