Double Cheese Scones recipe

These scones are deliciously soft and chewy with a wonderfully cheesy centre.

Ingredients:

  • 250g plain flour
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 tsp. caster sugar
  • 250ml milk
  • 90g butter
  • 100g cheddar cheese
  • 150g strong cheese gruyere or something similar
  • 1 tsp. olive oil

Method of Preparation:

  1. Preheat the oven to 200C and grease and line a baking tray using the olive oil.

  2. Sift the flour, baking powder and salt into a bowl and then mix in the sugar. Add the cheeses and stir well.

  3. Add the butter to the dry mix and then cut it into the mixture using two knives or a fork, until the mixture resembles coarse breadcrumbs.

  4. Stir in the milk until everything is just holding together. Knead the dough for one minute so that the mixture is a bit smoother.

  5. Form the scones by dropping 2 tbsp. at a time onto the baking tray.

  6. Bake the scones for 20 minutes or until they’ve risen.

This recipe will make 16 scones, so that’s about eight portions. These would be delicious with just a little bit of butter spread onto them fresh from the oven.
